Welcome to Chef Michael’s Carb Conscious Recipe Corner! My husband is a chef – and a damned good one! This, of course, comes with a LOT of dishes, but his creations are ALWAYS more than worth the cleanup! Have you ever gone out to a restaurant and found a dish you absolutely LOVED, but you couldn’t get it anywhere else? In our house, I can have any restaurant dish I want, replicated (and usually even improved) right here at home.

It’s been quite an ordeal

If you’ve read my WHY page, you’ll know the story of how Michael has recently become a type 1 diabetic (read here), via the loss of his pancreas. The traumatic ordeal that this has become has been quite disturbing for someone who’s life’s work has revolved around the food that became his enemy. At first, he was afraid to eat because it caused the pain to flare. Then he wasn’t allowed to eat at all while he had a feeding tube placed. Finally, once they removed his pancreas, sections of his stomach went with it. Weaning back on to food, when you’re a chef and REALLY hungry, can be just as disturbing. Learning to manage the blood sugar is still an ongoing process.

The Birth of the Recipe Corner

If you’re diabetic, you know we have to count ALLLLLL the carbs. We check blood sugar multiple times a day and he takes insulin multiple times a day. He finally decided that if he was going to have to deal with all these lancets and needles, the food was going to be worth it. SO… here we are. He’s got some delicious recipes he’d like to store and share here – along with the carb count if he has it. HE wants his recipe corner to reference when he’s cooking – at home or anywhere else – so he doesn’t have to re-calculate every time he makes something – YOU just get the benefit of his work!

Steakhouse Mushroom Sauce Reduction – Accompaniment

I recommend this reduction/accompaniment side dish below to be served with just about any cut of steak or cut of meat that you prefer. Grilled to your choice of doneness. Increase the size of the mushrooms and replace them with Large Whole Portabella Caps, the 4″ to 6″ size, as a meat replacement option. Grilled just right, these can be just tasty as any steak!

Homemade Pizza Dough

This homemade Pizza Dough recipe is one of my family’s favorites. We first came up with this recipe as a couple, and perfected it as our kids grew over the years. With this recipe, we end up with 2 – 16″ pizzas with a pretty nice thickness for the crust, not too thick not too thin.

Homemade Creamed Corn with Pancetta

This one is not only a hit for the adults in the house, but the kids love it as well! Even request it from time to time… What kids request Creamed Corn?! Mine do, because this is really that good. Give it a try for yourself! You’ll find yourself making it again and again.

My family loves it when I make this dish, and it seems to vanish rather quickly when it is sitting hot and fresh, not a leftover in sight! I am sure your family will savor it just as much as mine!
